The farmer responsible for this coffee, Huver Castillo, works as a schoolteacher day-to-day. He represents the new school rather than the old school, which you will understand once you taste this coffee. A math teacher and a third-generation grower, today he creates coffees together with his father on the family farm El Paseo in Nariño, high above the Buesaco Valley.

This Caturra is definitely far from ordinary. 36 hours of pre-fermentation in the cherry, followed by six days of anaerobic fermentation with sea salt and enzymes designed to bring out its floral character. After depulping, the coffee is gently dried indoors, where the temperature is constantly kept below 38°C, and then rests for 15 days. An unusual brew, hard to mess up due to its intensity, and perfect for debates about the future of coffee. A coffee you can love and argue about passionately.

Store in a cool, dry place.
